What I love about nachos... While there are many things I love... My favorite part is that your nacho creation is only limited to your imagination. (Granted this can be said about many things!) Tonight we had all natural garlic hummus tortilla chips toped with a red/pinto/black bean medley seasoned cuban/Jamie style. With sautéed watercress greens (oacv, ovco, organic brown sugar, paprika, cumin, Himalayan salt and cayenne) and sautéed pineapple (ovco, organic brown sugar, allspice and Himalayan salt). Plus sautéed wild whiting (vegetable broth, ovco, tequila, lime, garlic, capers, cumin, himalayan salt and cayenne, homemade salsa verde and guacamole with a side of fried plantains. #WeighInDay I was 161 last Monday... Super stoked, because I haven't seen under 160 since about the end 2009 and as of today I am 158.4 pounds! I got close last year when I was down to 161 in the Summer... However, moving to NJ and the necessity of sharing meals with friends threw me off my game. I gained 10 pounds in a few months after my move and was 178 by the end of the Winter. I started working out and got to 171 and was stuck there for a hot minute. Thankfully, we have all grown together more healthfully, so my diet is a lot closer to what it was before I moved to NJ. And that combined with consistently working out means... Bye-bye excess weight! As each week goes by I feel and look healthier and healthier. It's amazing how different 10 pounds makes or now 12 pounds! I'm interested to see how things continue to progress. This time I'm not letting anything derail me from taking care of my temple. It's been awhile since I updated you all on my fitness/health journey... I've been consistently working out each week. Though the past two, have been less than previous weeks. My Kung Fu training has been less the past few weeks as well. Some of this has to do with the amount of work I have, some due to fighting off becoming sick abs letting my body concentrate on immunity vs. repairing from workouts and a lot to do with feeling a little down and out. This time of year is just hard on me, though I do my best to fight it each year. And each year I do heal and accomplish more than the previous! Losing a child just plain out sucks, there's no nice way to put it. The good news is, I keep fighting the good fight and I have been losing weight. Part of this is due to changing my eating habits some and another part due to my physical activity. My weigh in is tomorrow, however as of last week I lost 10 pounds. From 171 to 161. Some of my pants are falling off, some that haven't fit in a year fit fine while others are getting loose. Weirdly enough though I'm in limbo between size 10 and 12, depending on the maker and cut... And at 171 it was a limbo between 11 and 12... I'm digging my figure and I'm not too concerned about the pounds or size of my jeans. I've been a whole lot less bloated and just feel lighter, which makes a huge difference. Now, I want to focus on toning and strengthening my body. And wherever this journey takes me, I know my temple will be healthier and stronger as each day I am blessed with passes.
