What's for dinner tonight? Vegan poblano relleno aka stuffed poblano peppers. Stuffed the peppers with leftover Cuban black beans from last night's dinner combined with sautéed mushrooms, onions, garlic and kale and topped with a cashew avocado cilantro lime 'cream' sauce and last night's homemade salsa verde. Side dishes included basmati yellow rice with my homemade seasoning (I use turmeric for the golden color) with bell peppers and peas plus fried platanos.
