One simple way to be more efficient is to make enough food for leftovers. I especially do this when it comes to soup, beans, lentils and rice. I'm not quite there in the meal prep for the week thing, but cooking extras of these always makes other dinner plus lunches a cinch. For example today for lunch, I reheated some soup from last night on the stove for a few minutes. While that was heating up, I toasted a piece of organic sprouted grain bread and diced half an avocado and smeared the other half on my bread. Sprinkled some sea salt, cumin and cayenne on top and viola there's lunch. It was sooo good too!
